I've been making lasagna since my college days, learning at first how to make the sauce from scratch, types of cheese to use, and the quality of italian sausages. However, that recipe got to be pretty expensive, so over time I developed a more frugal recipe and...a signature touch? That is...I made my lasagna spicy. And with encouragement from family and friends, I found different ways of making it spicy. Lasagna is really easy to make, there are even recipes printed on the lasagna box. Here's my latest recipe involving Dave's Insanity Sauce (with garlicky flavor). I served this creation last Thanksgiving.
Start out with the sausage first. Here I use spicy Italian sausage from TJ's. Remove the sausage from the casing, cook and crush it as you go. Now the important part. After browning the sausage, add the Insanity sauce! This is where the flavor comes together. It could be un-nerving to pour this much Insanity sauce, since a drop usually will do...but you must. Remember, this is for a tray of lasagna, not just a plate.
After thoroughly mixing the Insanity sauce in with the meat, pour in the pasta sauce. For this recipe, I use TJ's Rustic Bolognese, about a bottle and a half. Bring to a simmer on medium heat.
While that's happening...put together the Ricotta cheese and egg mixture. About 20-30 oz of Ricotta, and two large eggs.
Mix until cheese and eggs are blended together. Then...wait for part 2.
